For strings, I'd recommend Pirastro Jazzers.
They have a bright tone with excellent bottom, long sustain and deep growl.
I have a barely used set that I could sell you for cheap if interested.
For the pickup it's more difficult.
Amplifying an EUB is a different story than an acoustic.
Do you use a regular bass bridge? With normal height?
I had good results with an Underwood pickup.
The problem with a solid-body EUB is that the balance between the strings can be uneven.
Maybe a K&K Bass Max.
Of course Barbera pickups would be great, but that's way over your budget.
He puts a piezo under each string at the bridge.
